La Navidad, época de banquetes en que no desaparece la desigualdad
SANTO DOMINGO. La Nochebuena no pasa por alto en casi ningún hogar dominicano, por ello desde el pavo al horno de la tradición estadounidense hasta el más modesto locrio de salami se pueden degustar en este día que prepara el paladar para recibir el día de la Navidad.
Los artículos importados que se utilizan en la época navideña ascendieron a US$64.2 millones sólo en los meses de octubre y septiembre, según la Oficina Nacional de Estadísticas (ONE).
Dicho movimiento comercial da cuenta de que sea en abundancia o en la extrema pobreza son muchas las familias que tienen presente el 24 de diciembre como signo de celebración y buen banquete, siempre que los ingresos lo permitan.
A Yajaira González Vargas su vecinos le conocen como “Azua”. La mujer de piel morena vive en una casucha a la orilla del río Ozama, cuyas habitaciones, divididas por cortinas y pedazos de cartón acogen a sus tres hijos. Una hija tiene 22 años y está postrada en una cama debido a un derrame cerebral que padeció a los 12, y desde entonces su vida ha sido anormal.
Además de ello tiene una válvula en el corazón y debe ser medicada de manera constante para poder controlar su presión sanguínea, así como aliviar sus dificultades para la respiración. El bulto colgado detrás de la cortina con las medicinas es parte del día a día de “Azua” para mantener con vida a su hija, quien se pasa los días acostada, frente a un televisor.
“Yo siempre hago mi cena. Le mando a mis vecinos cercanos, me queda y la guardo en la nevera. Pero este diciembre viene duro”, advierte “Azua”, sobre las peripecias que aguardan para este día de Nochebuena. Dice cocinará un locrio de salami para “embullar a los muchachos”.
Tiene experiencia de trabajo doméstico y durante un tiempo sirvió comidas en un pequeño restaurante, pero desde hace nueve meses está desempleada.
González se ha dedicado a vender mabí como forma de permitirse un ingreso, por lo que son frecuentes los vecinos que llaman a la puerta donde cuelga un letrero que indica que se vende el refresco y marcada además con el número cinco que señala será parte de las viviendas desalojadas como parte del proyecto habitacional gubernamental Domingo Savio que trasladará a cientos de familias de esta comunidad.
“Esta Navidad está lenta. No hay dinero, no hay trabajo. No tenemos con qué comer”, afirma la mujer.
De acuerdo con la ONE, Domingo Savio, zona en que se encuentra La Ciénaga, registra un alto Índice de Necesidades Básicas (NBI) de 1.61, sólo por detrás de La Zurza. Esta calificación mide las privaciones o deficiencias de los hogares en términos de materiales de construcción, servicios básicos y hacinamiento con un mínimo de cero.
Mientras Karen Tallaj, al otro extremo de la balanza social, cuenta que desde pequeña le han inculcado el espíritu de celebración de la Navidad y de aprovechar esta época para estrechar los vínculos entre sus familiares y amigos.
Los personajes como Santa Claus y los Reyes Magos han sido parte de las creencias de Karen desde su infancia, y así las ha mantenido dentro de su círculo íntimo.
Para ella y su familia, la época navideña inicia el cuarto jueves de noviembre con la celebración del Día de Acción de Gracias, una festividad que tiene su origen en Estados Unidos, pero que se ha expandido a otros países y República Dominicana no ha sido la excepción.
Tallaj explica que a partir de este día, en que preparan una cena de pavo al horno con moro y ensaladas, se inicia “el club de Navidad” de su hogar en el que participan sus parientes, además de sus dos hijos y su esposo.
Durante este período regularmente se reúnen para ver películas alusivas a la época, se intercambian regalos y llevan a cabo distintas actividades recreativas que tienen como epicentro el árbol navideño del hogar.
“Desde que yo oigo Navidad, es la familia. Toda la vida hemos sido muy unidos”, sostiene Tallaj, quien pertenece a una familia de clase media alta del sector Piantini, localizado en el polígono central de la capital dominicana, en la que las fiestas de Navidad son una constante que con el pasar de los años se fortalece.
Explica que su esposo Orlando Martínez, quien es conocido como “Dj Buba” se encarga de animar las fiestas con música y otros elementos, debido a que manejan una compañía que se dedica a realizar todo tipo de fiestas.
El día de Nochebuena en casa de la familia Tallaj Martínez tiene un menú que incluye el tradicional cerdo asado, pollo al horno, pavo, jamón agridulce, ensalada rusa, ensalada de papas, pastelitos de harina y pasteles en hoja. A ello se suman las típicas golosinas, bebidas alcohólicas y un chocolate para calentar la madrugada.
“Ahí no se para hasta las cinco de la mañana bailando en familia”, comenta Tallaj, acerca del jolgorio.
El costo promedio de una cena de Nochebuena en lafamilia Tallaj Martínez oscila entre los RD$20 mil y RD$25 mil, aunque puede incrementarse si se aumenta el número de asistentes.
“Para nosotros es muy importante estar unidos y nos mantenemos en unión no importa lo que sea. La familia es lo primero y uno ha tratado de mantener eso”, destaca Tallaj.
Cerdo en puya
La época de Navidad también es buena para el comercio, por lo que la cena de Nochebuena no se limita al hogar y las lechoneras esperan a los clientes con el tradicional puerco en puya. En el puesto “El Villano”, uno de los varios que hay en la zona de la autopista de San Isidro, se oferta la carne asada del animal a RD$ 250 la libra. También disponen de personal para cocer a leña los cerdos a quienes deseen ponerle el sazón en casa. El proceso se toma unas seis horas y quien lo desee para el 24 debe llevarlo hoy.
